Yummy Gluten Free Taco Casserole

There are loads of recipes out there that claim to be “quick and easy.” They are, after all, the words every busy adult wants to hear. And while it may be I’m just a lazy chef, not all recipes that lay claim to these titles truly meet MY standard of quick and/or easy. Is it just me?

This gluten free taco casserole, however, really does live up to the claim of quick and easy. Get yourself a rotisserie chicken and life gets even better. Plus this recipe scores bonus points for being totally family friendly because, while it’s packed with yummy flavors, it’s not too spicy and approved by even the pickiest of children 🙂

Can You Freeze Gluten Free Taco Casserole?

Yes, you sure can! This recipe makes a perfect freezer meal that you can prepare ahead of time so all you have to do is bake and eat when you’re ready!

To Freeze: Assemble the casserole exactly as stated in the directions. Afterward, place in an airtight container and freeze for up to a month.

To Bake: When you’re ready to eat, simply leave the casserole in the fridge to thaw (I move it to the fridge in the morning and it’s ready by dinner time) and then bake according to the original directions. Super easy!

Is Taco Seasoning Gluten Free?

One of the ingredients you will need for this recipe is taco seasoning. Most brands are made from spices and naturally gluten free, but always make sure to check. These are the brands that I have safely used: Old El Paso, Kroger, Ortega, and McCormick. All of these brands make their taco seasoning mixes without gluten-containing ingredients, so you can enjoy all your favorite Mexican dishes without worry.

What Ingredients Do I Need?

  • 1 rotisserie chicken, shredded
  • 14.5 oz can diced tomatoes
  • 12 oz bag favorite frozen vegetables
  • 1 packet taco seasoning (see note about GF taco seasoning above)
  • 2 cups instant white rice
  • 8 oz cream cheese
  • 1 cup sour cream
  • 2 cups Mexican cheese, shredded

A family-friendly taco casserole recipe that truly meets the definition for quick and easy. Plus it's gluten free too!

Ingredients

  • 1 rotisserie chicken, shredded (about 2 cups of cooked chicken)
  • 14.5 oz can diced tomatoes
  • 12 oz bag favorite frozen vegetables (we like corn, peas and carrot mix)
  • 1 packet taco seasoning (see note about GF taco seasoning in post)
  • 2 cups instant white rice
  • 8 oz cream cheese
  • 1 cup sour cream
  • 2 cups Mexican cheese, shredded

Instructions

  1. Preheat oven to 350 F.
  2. Grease a 13 x 9 inch baking dish.
  3. In a large bowl, mix together chicken, tomatoes, frozen vegetables, taco seasoning and rice.
  4. In a separate bowl, thoroughly combine cream cheese, sour cream and 1 cup of the shredded cheese.
  5. Stir cheese mixture in with the chicken and rice and mix until evenly combined.
  6. Pour into baking dish, cover with tin foil and bake for 40 minutes.
  7. Remove tin foil and top with remaining 1 cup of cheese.
  8. Return to the oven for 10 additional minutes.
  9. Serve with tortilla chips, avocado, sour cream or any other toppings your family enjoys!
