Cheesy Gluten Free Pizza Rolls!

Growing up in the ’90’s, I can still remember jumping onto the couch after school, flipping on the TV and seeing the ads for Totino’s pizza rolls. They looked so fun and delicious! Unfortunately my mom didn’t agree with me, so alas I never got to try this coveted pizza snack. But it doesn’t even matter anymore, because I have a recipe for pizza rolls that knocks the socks off Totino’s and, of course, it’s gluten free too!

These gluten free pizza rolls are so simple to make and kids (and everyone basically) absolutely love them. They are the perfect after-school snack, appetizer for friendly get-togethers, or just something to munch on while cuddled up on the couch watching a movie (doesn’t that sound fabulous?!). Even if you’re not a baker, I promise this recipe is pretty hard to screw up. There isn’t yeast or complicated ingredients, just follow the recipe below and you will be fine!

How to Make Gluten Free Pizza Dough

The pizza dough I used is based on the popular 2-ingredient pizza dough recipe. Maybe you’ve heard of it? Well, to make it gluten free, a few changes need to be made. Don’t worry, they’re easy changes 🙂

  1. Mix 2 cups gluten free measure for measure flour (I really like King Arthur GF Flour) with 1 tsp salt and 1 tbsp baking powder.
  2. Into the dry ingredients add 1 1/4 cup plain Greek yogurt and 1/4 cup water.
  3. Use your hands to combine the ingredients and form a dough ball.

That’s it! You can use this dough for the pizza bites or to make a regular gluten free pizza. Either way, it’s delicious!

GF Pizza Rolls Step by Step

Alright! Let’s make some bite-sized pizzas! First, preheat the oven to 400 F and line a baking tray with parchment paper.

Next, in a medium mixing bowl, thoroughly combine the gf flour, salt and baking powder.

Step 1: Into the dry ingredients, add in the yogurt and water. Combine with your hands until the dough forms a ball. It will be sticky.

Step 2: Lightly flour a flat surface and rolling pin. Roll out the dough until it is about 1/4 inch thick and then cut the dough into one large rectangle using a sharp knife. Cut the dough into smaller rectangles about 3 inches long by 2 inches wide.

Step 3: Making sure the counter and rolling pin stay covered in flour, take one of the small rectangles and roll into out length-wise.

Step 4: In the center of half the rectangle, spread a thin layer of marinara sauce, some cheese and pepperoni. Be careful not to overfill!

Step 5: Fold the rectangle in half and pinch the sides. Slit the top 2-3 times with a knife and then place on the baking sheet. Repeat with the remaining dough rectangles.

Brush the tops of the pizza rolls with olive oil and bake for 15 minutes or until the dough is golden brown.

Step 6: Enjoy hot out the oven with some leftover marinara sauce!

Can You Freeze Gluten Free Pizza Dough?

Yes! You can actually freeze the dough itself or the baked pizza bites for an easy bake and eat snack.

To freeze just the pizza dough, roll it out flat on a piece of parchment paper and then place it in the freezer for an hour or two. After the dough is frozen, wrap twice with plastic wrap or seal in a large Ziploc.

To freeze the pizza rolls, let them cool completely after baking. Seal in a Ziploc freezer bag, making sure to remove as much air as possible.

When you’re ready to cook, simply bake at 400 F for 15 minutes or until golden brown.
