Ultimate Gluten Free Pizza Recipe

Finding a good gluten free pizza is HARD. But I love pizza (who doesn’t?!) so, over the years, I kept searching for that one pizza. The one that would finally compare to my former gluten loving days.

I tried countless restaurant pizzas and some were good, but they were pretty darn expensive too. So I started experimenting at home. After a lot of trial and error, I stumbled upon Caputo gluten free flour (which is superfine and makes beautiful dough). It was a game changer, and this ultimate gluten free pizza recipe was born!

Caputo Gluten Free Flour

Right out of the bag, you’ll notice that Caputo Fioreglut Gluten Free Flour is different. The texture is superfine and lightweight. Made in Italy and composed of an all-natural blend of rice, buckwheat, and corn flours and starches, this blend was made specifically for baking gluten free bread and pizza dough.

The Controversial Ingredient

This flour contains gluten free wheat starch. When you go gluten-free, one of the first things you learn to avoid is anything with wheat in it. So it;s quite shocking to see wheat on the ingredient list of something labeled gluten free.

However, wheat starch is simply the starch of the wheat plant. The wheat undergoes a special process to remove everything (gluten too), except the starch. So, if done thoroughly, wheat starch can be gluten free.

*Note: If you are allergic to wheat specifically, you could still have a negative reaction to this flour.

How to Make Gluten Free Pizza with Caputo Flour

This pizza recipe is easy enough for a total beginner. Which is great because it’s so delicious, you’ll want to make it over and over!

*Note: With all baking, but especially gluten free baking, you NEED to invest in a food scale. They are less than $15 at Walmart but will save you so many headaches and wasted ingredients. Trust me on this.

Also for a truly crispy delicious crust, a pizza stone is a necessary.

Okay, enough talk. On to the recipe!

Dough Ingredients

  • 250 g Caputo Fioreglut Gluten Free Flour
  • 9 g salt
  • 5 g instant yeast
  • 200 g warm water
  • 7.5 g olive oil

Pizza Topping Ingredients

  • Pizza sauce (For store-bought, I really like Rao’s marinara)
  • Fresh Mozzarella cheese
  • toppings of choice

Directions

Step 1:

  • Mix together the warm water and the yeast in a small mixing bowl and let sit 5 minutes or so.
  • Meanwhile, combine the flour and salt in a large mixing bowl.
  • After 5 minutes, stir the oil into the wet ingredients bowl.

Step 2:

  • Pour the wet ingredients into the flour mixture. Stir (either by hand or in stand mixer) for 3 – 4 minutes or until thoroughly combined.
  • Cover the bowl with plastic wrap and let rise for 2 hours.

Step 3:

  • After 2 hours, preheat the oven to 500 F.
  • Flour your work surface, rub olive oil on your hands, and then knead the dough for 2 minutes.

Step 4:

  • Split the dough and create two even balls.

Step 5:

  • On a generously floured pizza peel, place one of the dough balls in the center.
  • Using your hands and working from the middle, press the dough outwards until you have a thin (about 1/4 inch thick) round crust.

Step 6:

  • Add toppings to the pizza and then slide onto a pizza stone in the preheated oven.
  • Cook for approximately 13 minutes or until crust is golden brown.
  • Remove and enjoy!
