Yummy Gluten Free Monk Fruit Cookies

Sweetened with 0 calorie monk fruit sweetener, the cookies are rich and moist and so delicious, I promise you won’t miss the extra sugar!

You can prepare the cookies two ways – either as plain peanut butter cookies or peanut butter cookies dipped in chocolate (also sweetened with monk fruit). Both ways are delicious, but I personally love them dipped in chocolate. With the hardened outer chocolate shell and the soft peanut butter inside, it’s definitely a winning combo!

How to Bake with Monk Fruit

Baking with monk fruit sweetener is a great zero-calorie and zero-gylcemic choice for baking. Because monk fruit is naturally about 300 times sweeter than sugar, on it’s own, it can be difficult to calculate how much to use. But there’s an easy solution…

I really like the Lakanto monk fruit sweetener, because it’s special blend can be used as a 1:1 substitute for sugar.

They even have 4 different types of sweeteners to perfectly suit whatever you are cooking or baking.

1. CLASSIC MONKFRUIT SWEETENER/ORGANIC

A 1:1 substitute for white sugar. Good for baked goods, drinks, sauces, etc.

2. GOLDEN MONKFRUIT SWEETENER

Similar to the Classic above, but has a slight maple flavor with the texture of cane sugar. Many people substitute it for brown sugar.

3. POWDERED MONKFRUIT SWEETENER

With a a powdered texture, this sweetener is perfect for icings, cheesecakes, etc.

4. MONKFRUIT BAKING SWEETENER

Specially formulated to use in baked goods. The Baking Sweetener browns better, has a powdered texture, and dissolves easily.

How to Make Chocolate Peanut Butter Monk Fruit Cookies

Ingredients:

  • 1 c peanut butter
  • 2/3 c monk fruit sweetener with erythritol (I used Lakanto brand)
  • 1 egg
  • 1 cup chocolate chips – either sweetened with monk fruit or sugar
  • 1/2 tbsp course sea salt (optional)

First preheat oven to 350 F, and then grease a cookie sheet.

Mix peanut butter, monk fruit sweetener and egg together in a medium mixing bowl.

Using a cookie scoop or spoon, create 1 inch cookie dough balls and place on cookie sheet. Place cookie sheet in preheated oven and cook for 14 minutes.

Remove cookies from oven and press each cookie down with a fork.

Let the cookies cool and firm up for 10 – 15 minutes.

Meanwhile melt the chocolate in the microwave being careful not to over heat.

Dip each cookie into the chocolate, covering all sides. Sprinkle with sea salt if desired.

Let the chocolate cool and harden, and then enjoy!

The recipe just says C Peanut Butter. Could you please specify the quantity of Peanut Butter needed.
