These gluten free cherry pie bars are so easy and quick you’ll want to make them again and again. They are also an easy dessert to make with kids (’cause summer break is coming up soon…gulp) Anyway, on to the recipe!
Cherry Pie Bar Ingredients
- 1 stick butter, softened
- 2 eggs
- 1/2 cup sugar
- 1/2 tsp vanilla extract
- 1 1/2 cups gluten free all-purpose flour (I used King Arthur Measure for Measure)
- 1/2 tsp salt
- 21 ounces cherry pie filling
- 1/4 cup powdered sugar
How To Make Gluten Free Cherry Pie Bars
Preheat the oven to 350 degrees F. Mix the butter and the sugar. Add eggs and vanilla extract. Beat thoroughly. In a separate bowl, combine the gluten free flour and salt. Add the dry ingredients into the wet and mix well.
Grease an 8×8 baking dish and then spread about 2/3 of the batter evenly in the bottom of the prepared pan. Pour the cherry filling on top. Drop the remaining batter in flattened pieces on top of the cherry filling as desired. Bake for 30 minutes or until golden brown. Remove from the oven and sprinkle with the powdered sugar.
