First, we need to prepare the eggs yolks for the hollandaise sauce. Crack and pour 3 egg yokes into a small dish. Set aside and allow them to warm to room temperature while we prepare the rest of the sandwich.
Next, fry another egg (or two if you like) and heat up some ham. You could also toast your English muffin at this point if you prefer it toasty.
