Are Au Gratin Potatoes Gluten Free?

The answer to this question is both yes and no. It all depends on the ingredients that are used to make the au gratin potatoes. While potatoes are definitely gluten free, some boxed Au Gratin Potatoes DO include gluten and many homemade recipes call for a flour roux or breadcrumbs on top. It is pretty easy, though, to tweak the recipe a bit and make your own potatoes au gratin at home.

  1. Make the roux with gluten-free flour. Some people are surprised to know that you can easily make a roux with gluten-free measure for measure flour. It’s a simple swap too – so 2 tbs flour would equal 2 tbs gluten-free flour.
  2. Either do away with the breadcrumbs altogether or use gluten-free bread to create the breadcrumbs.

Other than these two changes, you should be able to follow your favorite recipe as is.

Why doesn’t pre-shredded cheese melt?

Have you ever used bought shredded cheese to use in a recipe and noticed that it didn’t melt well? That is because most pre-shredded cheeses contain ingredients that are meant to keep the shreds from clumping together in the bag.

But of course, in recipes like this one, we want the cheese to melt well with no lumpy chunks left behind. So here are my two suggestions:

  1. Get a block of cheese and grate it yourself right before you need it.
  2. Use Tillamook pre-shredded cheese. This is the only brand I have found that consistently melts evenly when heated.

Ingredients Needed

  • 2.5 lb potatoes, I used red potatoes but you could also use yukon gold potatoes or russet potatoes.
  • 3 tbs butter
  • 3 tbs gluten-free, all purpose flour
  • 2 cups milk
  • 1 tsp dry mustard
  • 1 cup cheddar cheese, shredded
  • 1 cup Gruyere cheese, shredded
  • salt and pepper to taste

Gluten-Free Au Gratin Potatoes Recipe

Au gratin potatoes are one of those classic comfort foods. With a warm
creamy texture and rich, cheesy sauce it’s no wonder many people
consider this the perfect side dish.

Ingredients

  • 2.5 lb potatoes
  • 3 tbs butter
  • 3 tbs gluten-free, all purpose flour
  • 2 cups milk
  • 1 tsp dry mustard
  • 1 cup cheddar cheese, shredded
  • 1 cup Gruyere cheese, shredded
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400 F.
  2. Slice potatoes into circles, use a mandoline for easier and more uniform slices if desired.
  3. Layer the potato slices in a greased, 9"x13" casserole dish and set aside.
  4. In a medium saucepan, melt the butter over medium-low heat. Add in the gluten-free flour, stirring constantly until the flour is completely mixed in.
  5. Pour in milk and mustard powder and continue to stir until the mixture begins to thicken, 2-3 minutes.
  6. Add the shredded cheese into the saucepan and mix until all the cheese is melted. Sprinkle salt and pepper to taste.
  7. Pour the cheese mixture evenly over potatoes and then cover with aluminum foil.
  8. Bake for 40 minutes. Remove the foil and bake for an additional 20 minutes or until the top is golden brown.
  9. Serve immediately. To store the leftovers, seal them in an airtight container in the fridge for up to 4 days.
