Scrumptious Almond Flour Chocolate Cake Recipe

Few things are better than warm chocolate cake with cold vanilla ice cream dripping deliciously down the sides. If you’re following a gluten free diet, you might have assumed such indulgences were behind you. Well, let me reassure you! This cake is just as decadent and moist as the chocolate cake you remember!

And it gets even better – this easy gluten free chocolate cake (made with almond flour) is done and ready to eat in 40 minutes and an easy recipe to make with kids! As a working mom with very little free time, this is my absolute favorite gluten free cake recipe. You simply must try it!

Before we dive in, any Star Wars fans notice the Death Star on the milk glasses in the photo above? Awesome right?! My husband is a huge fan, and I surprised him with these Star Wars glasses (and cool light saber chopsticks) from Amazon last year. They are heavy glass and have the Star Wars logo on the other side. Love them!

Okay, okay…back to business. This cake really couldn’t be any easier to make! The recipe takes advantage of a wonderful baking mix from Simple Mills. I love this baking mix because it uses only these simple ingredients:

  • Almond flour
  • Organic coconut sugar
  • Cocoa
  • Arrowroot
  • Organic coconut flour
  • Baking Soda
  • Sea salt

While I could take the time to mix all these ingredients together from scratch, why would I want to do that? This mix is simple, organic and delicious! Don’t you love shortcuts that work out for everyone?

Easy Gluten Free Chocolate Cake Recipe

The nice thing about this cake is that you can customize to fit whatever you are currently craving. I’m pregnant right now (11 weeks!) and had been dying for a slice of chocolate cake for almost a month, but I was also craving citrus like crazy! So what’s a girl to do? Have both of course! The combination of rich chocolate and crisp citrus are so good together! But that’s the fun thing about this recipe; it’s easy to make it your own. Add chocolate chips or nuts, sprinkle with strawberries, whatever sounds good to you!
